Week 1
Budget Recipes

I bought enough food to make 5 main meals this week and kept the budget under $100.

Here's the list of ingredients:

  • Beef Sausages 550g pack

  • Meatballs Pork & Beef 560g

  • Bolognaise Mince (Pork & Beef) 500g

  • Frozen Chicken Tenders (10 pk) 400g

  • Frozen Crumbed Fish Fillet 425g

  • Block Tasty Cheese 250g

  • Shaved Parmesan Packet 125g

  • Baby Carrots Bag 500g

  • Baby Rocket Bag 60g

  • Sweet Corn x 2

  • Baby Broccoli Bunch

  • Brown Onions x 3

  • Tomatoes x 3

  • Brushed Potatoes 2kg

  • Shepherds Pie Recipe Base 50g

  • Long Grain White Rice 1kg

  • Spaghetti Pasta 500g

  • Beef Stock Cubes

  • Sweet & Sour Jar Sauce 500g

  • Diced Tomatoes can 400g

  • Baby Peas & Corn can 420g

  • Minced Garlic jar 250g

  • Tomato Paste can 140g

  • Tartare Sauce 250ml

  • Caeser Dressing 300ml

  • Hamburger Rolls x 6pk 

  • Milk 2L

Chicken Tender Burgers (with Caeser Dressing)

Ingredients:

  • Chicken tenders

  • Hamburger rolls

  • Caeser Dressing

  • Rocket

  • Tomatoes

  • Parmesan Cheese

Cooked the tenders in the air fryer on 200 deg for 10 minutes!

Put dressing on both sides of the burger bun and put it all together!

Dinner was ready in 15 minutes! So easy and yummy!

Shepherds Pie / Cottage Pie

Ingredients:

  • Bolognaise Mince

  • Shepherds Pie Recipe Base

  • Tomato Paste (1 tbspn / 1/2 can)

  • Onion

  • Carrot x 2

  • Baby Peas & Corn can

  • Beef stock cubes x 2

  • Miced garlic (1 tbspn)

  • Potatoes x 1.5kg

  • Milk

  • Cheese 

Items from home: butter, salt & pepper, oil

Pre-heat oven to 200 degrees Celsius

Peeled potatoes, diced and added to a pot of water on the stove

Boiled potatoes, drained, mashed and set aside

Diced onion and carrots, added oil to a pan and added onion

Cooked until translucent, then added garlic and carrots

Added mince and browned, added tomato paste & stock cubes

Allowed to simmer, added recipe base

Fill recipe base packet with water and add (add an extra 1/2 pack as well)

Combine and continue to simmer until it thickens

Add canned veggies, taste test and adjust with salt & pepper

In an oven proof dish, add mince & top with mashed potato

Top with grated cheese and bake for 25 minutes

Sweet & Sour Sausages & Rice

Ingredients:

  • White Rice (2 x cups)

  • Beef Sausages

  • Brown onion

  • Carrots x 4

  • Minced garlic

  • Sweet & Sour Sauce

  • Baby Broccoli (Half)

  • Corn x 1 (Cut into 4)

Wash rice and cook as you prefer (I like the absorption method)

Brown sausages in your pan, set aside

Dice onion and carrots

Add onion to pan and cook until translucent

Add tbspn garlic and carrot, cook until soft

Cut up sausages into bite size pieces and add back into the pan

Add sweet and sour sauce and turn down to a simmer

Allow sauce to thicken, turning sausages to cover in sauce

Cook broccoli & corn (I steam in the microwave)

Plate out rice and spoon sausages on top, with a side of corn & broccoli

Spaghetti & Meatballs

Ingredients:

  • Meatballs (Pork & Beef)

  • Spaghetti Pasta

  • Tomato Paste

  • Canned Tomatoes

  • Brown Onion

  • Beef Stock Cubes x 4

  • Parmesan Cheese

  • Minced Garlic

Ingredients from home: salt & pepper, mixed herbs, pinch of sugar & oil

Heat oil in a pan and add meatballs

Once browned, remove from pan and set aside

Dice up onion and add to pan, cook until translucent

Add minced garlic and tomato paste, stir through

Add tinned tomatoes, beef stock and pinch of sugar (I use brown sugar)

The sugar helps to balance out the acidity of the tomatoes

Boil water in a pot and cook spaghetti as per packet instructions

Stir through 1/4 cup parmesan cheese in sauce

Taste test and add salt & pepper & mixed herbs as needed

Add meatballs back into sauce and simmer

Drain pasta and add to you plate/bowl

Top with meatballs and sauce

Garnish with sprinkle of parmesan cheese

Fish, Homemade Chips & Veggies

Ingredients:

  • Frozen Fish

  • Potatoes 0.5kg

  • Tartare Sauce

  • Corn x 1

  • Broccoli 1/2

Peel potatoes and chop into chips or wedges

Preheat oven or airfryer

Add oil, salt and preferred seasonings to chips/wedges

Cook in oven at 200 deg for 30 mins or air fryer for 15 mins

If cooking in oven, add fish to a seperate tray and cook as per box 

If cooking in air fryer, remove potatoes and add fish for 12 minutes

Cut corn into cobs (soften in microwave for 1 minute for safer cutting)

Add corn & broccoli to microwave dish and steam

Serve up fish & chips with corn and broccoli with a side of tartare sauce
