Week 2
Budget Recipes
I bought enough food to make 5 main meals this week and kept the budget under $100.
Here's the list of ingredients:

Used from last week's shop:
Minced Garlic

Yellow Curried Prawn & Rice
Ingredients:

Raw Prawns
-
White Rice (2 cups)
-
Brown Onion (1)
-
Yellow Curry Paste (2 tbspn)
-
Tomato Paste (1 tbspn)
-
Minced Garlic (1 tbspn)
-
Coconut Milk (whole can)
-
Green Beans (150g)
-
Pak Choy (Both bunches)
Items from home: salt & pepper, oil
Peel prawns and clean
Wash rice and prep, cook as per instructions and your preferred method
Dice brown onion and add to pan with some oil
Add garlic and allow to simmer for 2-3 minutes
Add curry paste and mix to combine, add tomato paste and combine
Add in coconut milk and stir until all combined, allow to simmer
Wash beans and pak choy, cut ends off beans and cut in half, add to pan
Cut up pak choy into small pieces and add to pan, allow to simmer for 3-4 mins
Add in raw prawns, stir through to be covered in sauce and simmer for 5 mins
Serve prawn curry on a bed of rice :)

Turkey Mince Burritos
Ingredients:

Turkey Mince
-
Wraps x 4 (Half the packet)
-
Salsa Jar
-
Onion
-
Taco Seasoning
-
White Rice (1 cup)
-
Iceberg Lettuce (2 cups diced)
-
Tasty Cheese (1/2 - 3/4 cup shredded)
-
Sour Cream (4 tbspn)
Items from home: salt & pepper, oil
Note: I kept 1 cup of rice from night 1's meal to add to the burritos so I wouldn't have to cook any rice for this night's meal!
Dice up onion and add to a pan with some oil
Brown onion and add turkey mince, cook in pan for 5 minutes
Add taco seasoning and stir through
Add jar of salsa and mix through
Add rice and stir through, allow mix to heat through
Taste test and add salt and pepper as desired
Grate cheese, wash lettuce and slice
Take meat mix off the heat, set aside
Taking your wrap, start with adding meat, cheese & lettuce then sour cream
Carefully fold in sides and roll into a tight roll
Either toast in a clean pan on the stove or in a sandwich press
Slice in half and serve :)
