Week 1
Meal Planning

I bought enough food to make 5 main meals this week and kept the budget under $100.

Here's the list of ingredients:

  • Beef Sausages 550g - 1kg

  • Pork Mince 500g

  • Chicken Breast 1kg

  • Chicken Drumsticks 1.5kg

  • Sour Cream 300g

  • Milk (whichever one you prefer!)

  • Cheese Block 750g

  • Fresh Parsley (dried is also fine!)

  • Snow Peas

  • Broccoli Head

  • Cauliflower Head

  • Carrots

  • Baby Potatoes 1kg

  • Brushed/Washed Potatoes 2kg

  • Sweet Potato

  • Avocado

  • Iceberg Lettuce / Cos Lettuce 

  • Tomatoes

  • Tomato Paste

  • Ginger (Jar or fresh)

  • Garlic (Jar or fresh)

  • Soy Sauce

  • Rice 1kg

  • Naan (Can Make your own with 2 ingredient dough)

  • Coconut Milk x 2 400g tins

  • Curry Paste of choice (Tikka Masala)

  • Chicken Spice pkt (optional)

  • Canned Pineapple (pieces or slices)

  • Jar of Salsa of choice

  • Taco Seasoning

  • Taco wraps or shells (personal preference)

  • Chicken stock cubes

  • Sweet Chilli Sauce

Roast Chicken Drumsticks, Mash & Veg

8 x chicken drumsticks
1 x pkt Seasoning
2 x tbspn oil of choice 
Salt & Pepper
1 x kg potatoes 
2 x carrots sliced
1 x head broccoli 
Gravy of choice 

Pat down chicken with paper towel
In a bowl, add oil, seasoning, salt & pepper
Rub into chicken 
Bake in air fryer (30 mins) or oven (40-45)
Flip half way through cooking 
Peel & boil potatoes til fork tender
Peel carrots & steam carrots & broccoli 
Make your mash 
Make up gravy (optional)
Serve out & enjoy


Sausage & Vegetable Bake

6-8 sausages (I used beef)
1 x kg baby potatoes cubed 
1 x small-medium sweet potato cubed
2 x carrots diced
1 x head broccoli chopped into florets 
1 x brown onion diced 
1 x tbspn minced garlic
1 x tbspn tomato paste
1 x 400g tin tomatoes 
1 x cup chicken stock
1-2 tbspn mixed herbs
1-2 cups grated cheese
Salt & Pepper

Pre-heat oven to 200 degrees Celsius 
Peel & dice veggies
In a baking dish, add in veggies
Add in 1-2 tbspn oil & mixed herbs 
Mix thru together & cook in oven for 30 mins
Cook sausages in a pan
Once cooked, remove & set aside 
In that same pan, add in onion & cook
Add minced garlic & cook for further 3-4 mins
Add in tomato paste & tinned tomatoes 
Make up chicken stock & add to pan
Cut up sausages and add to pan 
Allow to simmer until veggies are ready 
Take out veggies from oven & add in sausage 
mix and stir through 
Top with cheese & bake for a further 25 mins 
Garnish with parsley & serve 


Sweet Chilli & Pineapple Stir Fry with Rice 

1 x kg chicken breast
2 x chicken stock cubes 
1 x tbspn mixed herbs 
Salt & Pepper
2 x carrots sliced
1 x pk Broccolini sliced
1 x cup snow peas halved
1 x onion diced 
1 x tbspn minced garlic 
1 x tspn minced ginger 
1 x cup pineapple diced
2 x cups rice cooked

2 x tbspn sweet chilli sauce 
1 x tbspn soy sauce 
4 x tbspn pineapple juice 
1 x tbspn cornflour


Dice chicken & season with oil, chicken stock cubes & herbs, cover & set aside
Prep & dice veggies 
Make up rice as per desired method 
In a wok or pan, add tbspn oil & add chicken 
Once chicken is cooked, take out & set aside 
Add in veggies & cook til tender 
Add in sauce and continue to cook
Add in chicken and mix til heated through 
Serve on bed of rice 


Potato & Cauliflower Tikka Masala

1 x kg baby potatoes
1 x head cauliflower
1 x cup snow peas
1 x brown onion diced
1 x tbspn minced garlic 
1 x tbspn tomato paste
2 x tbspn Tikka Masala curry paste 
2 x 400g Coconut milk
1 x handful parsley diced
2 x cups rice (cooked as per your method)
1 x pkt Naan Bread
Salt & Pepper

Prep & dice potatoes into bite size pieces 
Cut cauliflower into florets & halve snow peas
Dice up brown onion 
In a pan, add oil & onion and cook
Add minced garlic & cook for further 3-4 mins
Add in tomato paste & curry paste 
Stir in, add in coconut milk, salt & pepper
Add in potatoes & cauliflower, cover & cook for 10-12 minutes 
Cook rice as per your preferred method 
Test potatoes with a fork to see if cooked thru
Add in snow peas, taste test & adjust as needed
Stir through parsley 
Prep naan bread 
Serve curry on bed of rice with side of naan


Pork Mince Taco's

1 x pkt soft taco wraps 
1 x 500g pork mince 
1 x brown onion diced
1 x tbspn minced garlic 
1 x pkt taco seasoning 
1 x cup water
In seperate serving bowls:
1 x cup cheese grated
1 x cup fresh tomatoes diced 
1 x avocado diced 
2 x cups lettuce chopped 
1 x jar salsa
1/2-1 x cup sour cream 

In a pan, add oil & onion & cook
Add in minced garlic & cook for 3-4 mins 
Add in mince and cook til browned 
Add in taco seasoning & water 
Allow mix to thicken up 
Prep sides & set up
Have everyone to make their own!
